Today is National Chocolate Cake Day.

I’m stretching the fact just a touch.  It’s actually only National Chocolate Cake Day in the United States, but c’mon…!  It’s chocolate cake.  Do you need a better excuse than someone, somewhere made a national day out of it?

And to celebrate the day, I’m posting here my mother-in-law’s chocolate cake recipe, which is simple and quick and damned delicious.  It’s a no-fail recipe that we have been using in our family for decades.

Marg’s Chocolate Cake

Makes 12 servings

Prep Time: 25 minutes

Ingredients:

  • ¼ cup butter
  • 1 cup sugar
  • 1 egg
  • 1/3 cup cocoa
  • ½ cup hot water
  • 1 cup flour
  • 1 tsp baking powder
  • ½ cup sour cream or milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

Method

  1. Beat all ingredients together, for two minutes
  2. Pour into 9 inch pan
  3. Bake at 350 degrees for 30-35 minutes

Per serving:

  • 170 calories
  • 7g fat (34.1% calories from fat)
  • 4g protein
  • 6g Carbohydrate
  • 32mg Cholesterol
  • 16mg Sodium
