I’ve been getting a lot of recipes!

Thank you for those! I’ll be sorting through them for the next few weeks.

Here’s one that sounds like a never-fail, using pantry ingredients only. For the gluten free crowd, I would swap out the flour for all purpose GF flour and add some Xanthan gum.

This delicious chocolate cake is very easy to make with only a few ingredients that are normally available at home.

Serves: 8
Preparation time: 15 minutes
Cooking time: 35 minutes

Ingredients:

  • 1 cup of All-purpose flour
  • ½ Tsp Baking powder ½ teaspoon
  • 2 Eggs
  • ¾ cup of Olive oil
  • ½ cup of Strong brewed coffee
  • 2 cups of Semi-sweet chocolate chips
  • ½ cup of Brown sugar
  • 1 Tsp of Vanilla extract (alcohol-free)
  • Powdered sugar, for garnish

Directions:

  • Preheat your oven to 350 degrees F.
  • Grease a springform pan with non-stick cooking spray, set aside.
  • Whisk together eggs, olive oil, coffee, sugar, and vanilla extract in a bowl.
  • Stir in flour and baking powder until combined.
  • In a microwave-safe bowl, melt the chocolate chips in the microwave for 2 minutes or until melted, stirring after every 30 seconds.
  • Add melted chocolate in eggs and flour mixture and stir until well combined.
  • Bake for 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Remove from the oven and allow it to cool before cutting.
  • Garnish with a sprinkle of powdered sugar and enjoy.

Although we have a gluten free chocolate cake recipe we have been using for years that is delicious. If you’d like our version, let me know and I’ll pass that on, too.

Because I’m limiting the fresh food I’m using for recipes (it’s been three weeks since we shopped), I’m also having to use a great many new recipes. Some have been total disasters. Some have been surprising successes.

But I find I’m yearning for fresh salad!

So far, none of my immediately family have contracted CoVid19. We’re all very carefully self-isolating, although I think I might have to start going out for a walk each day. I never thought that I, a classic introvert, would long to get out of the house!!
